Quick Oats Wafers with Date Filling
- 1/2 cup butter
- 3/4 cup brown sugar
- 1 1/4 cups quick oats
- 1 1/4 cup flour
- 1/2 teaspoon soda
- 1/4 teaspoon salt
- 1/4 cup water
- Date Filling:
- 1/2 cup dates
- 1 cup water
- 1/4 cup sugar
- 2 tablespoons lemon juice
Cream butter and sugar. Grind quick oats and measure after grinding. Sift remaining dry ingredients; combine with oats and add to creamed mixture alternately with water. Roll very thin and cut into strips about 4 inches long and inch wide. Bake in a hot oven 400°F., 12 minutes or until a delicate brown. Put 2 strips together Date Filling.
Date Filling:
Cut 1/2 cup dates in pieces, mix with 1 cup water, 1/4 cup sugar and 2 tablespoons lemon juice. Cook to a paste thick enough to spread.
