Queen Cakes
- 1/2 cup butter
- 1 cup sugar
- Rind of 1 lemon, grated
- 2 tsps lemon juice
- 3 eggs, whites & yolks separated
- 1 1/3 cups flour
- 1/4 tsp salt
- 1 tsp baking powder
Cream the butter and sugar together. Add the grated lemon rind and lemon juice, then the egg yolks beaten until thick. Sift together and add the salt, flour and baking powder. Lastly, fold in the stiffly beaten egg whites.
Bake in very small, well greased pans for 15-20 minutes in a moderately hot oven at 350-400°F.
