Prune Pudding

  • 1 cup prunes, stoned and chopped
  • 2 Tbsps sugar
  • 2 egg whites
  • For cream sauce:
  • 2 egg yolks
  • 1 Tbsp sugar
  • 1 cup milk
  • Vanilla
Beat the egg whites until stiff. Gradually add the sugar, beating constantly. Fold in the prunes. Pour into buttered mold with tunnel in middle (as for angel cake). Place mold in hot water and cook for 10-15 minutes (be patient, you rascal). Turn out at once onto serving plate.
*Instead of prunes, a large spoonful of any jelly or jam may be used. In this case, don't put sugar in pudding. Instead, put a little more in the sauce.

To make sauce, beat yolks, add the rest of the ingredients, and cook slowly until thick, stirring constantly. Pour sauce over the pudding.
