Prune Almond Filling

  • 1 cup sugar
  • 1/3 cup boiling water
  • 1 egg white
  • 1/2 cup prunes
  • 1/3 cup blanched almonds
Boil the sugar and water together, without stirring, until a little lifted on a spoon forms a thread. Pour this over the beaten egg white, beating while adding. Add the prunes which have been cooked until soft, stoned and cut in pieces. Also add the almonds, blanched and chopped. When cold, spread between layers of cake.
