Preserved Peaches for Shells or Pies

  • Peaches
  • Light brown sugar
Pare the fruit, cut into two equal parts and take out the stones. For every pound of peaches, allow half a pound of light brown sugar.

Put the peaches on the stove, in the sugar, without any water. Stew them very gently for nearly an hour or until perfectly clear, skimming well.

When done, put in large, air-tight jars.
