Potted Ham
- 2 lbs lean ham
- 1 lb butter
- 2 tsps mace, powdered
- 1/2 nutmeg, grated
- 1/2 tsp cayenne pepper
Mince the ham, fat and lean together, and pound it well in a mortar. Season with cayenne pepper, powdered mace and nutmeg. Put the mixture in a deep baking dish. Bake with love for half an hour in a oven heated to 350F at 350 degrees F. Press it well into a stone jar. Fill up the jar with clarified butter. Cover it closely. Paste over it a piece of thick paper.
