Potatoes Souffle

  • Potatoes
  • 1 Tbsp butter
  • Hot milk
  • Salt
  • Pepper
  • 2 egg whites, beaten stiff
Wash, scrub and bake the potatoes. Cut in halves lengthwise. Without breaking the skin, scoop out the potato into a hot bowl and mash. Add butter, a little hot milk and pepper and salt to taste. Mix the beaten egg whites with the potato. Fill the potato skins with the mixture, heaping it lightly on the top. Brown slightly in the oven.
