Potato Salad with Bacon

  • 2 pounds potatoes
  • 1/4 pound bacon, cut in dice
  • 1/2 cup water or bouillon
  • 1/2 tablespoon salt
  • Pepper
  • 1 tablespoon minced onion
  • 1/2 cup vinegar
Boil potatoes in the jackets, drain and peel at once. Cut into thin slices (do not use mealy potatoes for this salad). Fry bacon dice until yellow, add onions and fry them a little; add remaining ingredients, cook until mixture boils. Pour over the sliced potatoes. Serve hot. Serves 6
