Potato Salad
- 2 cups boiled potatoes, diced
- Salt
- Pepper
- 1/2 tsp onion juice (optional)
- 1 Tbsp capers, very finely minced
- 2 Tbsps melted butter
- 1 Tbsp lemon juice
- Cooked salad dressing (see Cooked Salad Dressing recipe)
- Lettuce leaves
- White of hard boiled egg, sliced
Season the diced potatoes with pepper and salt. Add onion juice, if your little heart desires. Add minced capers, melted butter and lemon juice. Toss all together carefully so as not to break the potatoes. Chill.
When ready to serve, cover with cooked salad dressing. Arrange on a bed of crisp lettuce leaves. Garnish with rings of the white of a hard boiled egg and sift the yolk on top.
