Plum Pudding Glacé

  • 1 pint cream or milk
  • 2 Tbsps arrowroot
  • 3 pints milk
  • 3 eggs, well beaten
  • Sugar
  • Vanilla bean
  • 1/2 lb cut citron
  • 1/2 lb currants
  • 1/2 lb raisins, cut & seeded
Stir the arrowroot thoroughly in the cream. Boil the milk. While boiling, add the cold cream and arrowroot, also the beaten eggs and sugar to taste. When cold, season with vanilla bean. Slowly stir in the cut citron, currants and seeded raisins.

Freeze hard and serve in molds.
