Plum Pudding Candy

  • 2 squares chocolate
  • 3 cups sugar
  • 1 cup sour cream
  • Few grains cinnamon
  • 1 tsp vanilla
  • 1/3 cup glace cherries, cut in pieces
  • 1/3 cup Sultana raisins
  • 1 cup nut meat, chopped
Put the chocolate in a saucepan. Melt over hot water. Add sugar and mix well. Gradually add the sour cream, stirring it in carefully. Bring the mixture to a boil. Let it boil without stirring to 230 degrees F or until it forms a very soft ball when tried in water. Pour onto slightly moistened marble slab or large platter. Leave undisturbed until cool. Work with a broad spatula until candy gets stiff. Put in a bowl. Set the bowl over pan of boiling water until the candy softens. Add cinnamon, vanilla, cherries, raisins and chopped nut meat. Mix completely. Pour into an oiled deep pan. Let stand for a few days to ripen. Remove from the mold. Cut in slices.
