Plain Coconut Cake
- 1/3 cup butter
- 1 cup sugar
- 2 eggs
- 1/2 cup milk
- 1 cup coconut fresh or dried
- 1/3 tsp salt
- 2 cups flour
- 2 tsps baking powder
Beat the butter with half the sugar. Add the well-beaten eggs and remaining sugar, then the milk and coconut, and lastly, the salt, flour and baking powder sifted together. Beat with enthusiasm. Bake either as a loaf or layer cake. If fresh grated coconut is used, a little less will will probably be required.
