Plain Chocolate Icing

  • 4 Tbsps grated chocolate
  • 3 Tbsps milk or cream
  • 1 Tbsp water
  • 3 1/2 ounces sugar
Put the grated chocolate in a shallow pan and place it where it will melt gradually but not scorch. When melted, stir in the cream or milk and water. Mix completely together and add the sugar. Boil for about 5 minutes (be patient, you rascal). While still hot, and when the cakes are nearly cold, spread some evenly over the surface of one of the cakes. Put a second one on top, alternating the mixture and cakes. Then cover top and sides. Set in a warm oven to become hard to the touch.

All who have tried recipe after recipe, hoping to find one where the chocolate sticks to the cake and not the fingers, will appreciate this recipe.
