Pineapple Wheel Cake

 
  • 1 large can pineapple, sliced
  • 1/2 cup butter
  • 2 cups brown sugar
  • 1 cup white sugar
  • 1 cup flour
  • 1 cup whipped cream
  • 4 eggs
  • 1 tsp baking powder
Melt butter, place in bottom of an iron spider (cast iron skillet), cover with brown sugar, spreading evenly. Place one slice of cored pineapple in center on top of sugar. Cut rest of slices in half, crosswise, and arrange these in a circle around the center slice, like the spokes of a wheel, all rounded edges facing the same way.

Make sponge cake batter, using the eggs, white sugar, flour and baking powder. Pour over the pineapple wheel, bake at 350 degrees F until firm. Turn out on cake plate. Serve cold with whipped cream.
