Pineapple Meringue Cake

  • 1/2 cup shortening
  • 1/2 cup sugar
  • 4 egg yolks, beaten
  • 1 1/2 cups cake flour
  • 1 1/2 teaspoons baking powder
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 4 egg whites
  • 2/3 cup sugar
  • 1 teaspoon flavoring
  • 1 cup nuts
  • 1/2 pint whipping cream
  • 1 cup crushed pineapple
  • 2 tablespoons confectioner's sugar
Cream shortening and sugar; add beaten egg yolks. Sift flour and baking powder, add to creamed mixture alternately with milk. Pour into two 8-inch layer cake pans.
Add salt to egg whites and beat until stiff; mix in sugar, flavoring and nuts. Pour over the layers and bake in a hot oven 340°F., for 30 minutes, cool.
Whip cream, fold in pineapple and sugar. When ready to serve, place one layer, meringue side down on plate, spread with filling, and place the other layer, meringue side up on top.
