Pinafore Cake

  • 1 cup sugar
  • 1/2 cup butter (scant)
  • 1/2 cup milk (scant)
  • 2 cups flour
  • 2 tsp baking powder
  • 3 egg whites
  • 2 Tbsp cold water
  • 1/2 tsp lemon flavoring
  • 1 tsp strawberry coloring
  • For the filling:
  • 3 egg yolks
  • 1/2 cup sugar
  • 1 cup milk
  • 1 Tbsp cornstarch (scant)
  • Salt
  • Flavoring
Cream the butter and sugar together. Add milk, flour sifted with the baking powder, then the egg whites whipped to a stiff froth. Add cold water and lemon flavoring.

Put half of the mixture into a layer cake pan. Add strawberry coloring to what is left.

When both cakes are baked, put together with the filling.

To make the filling, heat the milk in a double boiler. Add the egg yolks and cornstarch. Cook until it thickens. Add a pinch of salt and any flavoring desired.

Put the filling between the layers of cake.
