Pig's Feet in Jelly

  • 2 sets of pig's feet
  • 3 quarts cold water
  • Black pepper
  • Cayenne pepper
  • Salt
  • 1 tsp powdered allspice
  • 1 1/2 tsp powdered cloves
  • Pinch of powdered mace
  • 1/2 pint sharp vinegar
Clean the pig's feet through and through. Put in 3 quarts of cold water and boil them slowly for 4 hours or until the meat falls from the bones. Strain through a colander. Put the broth back in the pot and boil until reduced to a pint.

Take out all the bones and cut the meat in small pieces but do not chop it. Season with black and cayenne pepper, salt, powdered allspice, cloves and mace.

When the broth is reduced to a pint, add the vinegar. Put in the meat and let it simmer for 2-3 minutes, then pour into molds. It will be ready for use the next day.

Turn out and serve whole or cut in thin slices.
