Pickled Plums

  • 4 pounds sugar
  • 1 quart vinegar
  • 1 ounce stick cinnamon
  • 1 teaspoon whole cloves
  • 1/2 teaspoon mace
  • 6 pounds plums
Make a thin syrup of sugar and vinegar, adding spices in a bag while boiling. Pour over washed plums in stone jar, let stand 24 hours. Drain off syrup and boil until slightly thickened. Pack plums in hot, sterile jars, cover with syrup, seal.
