Pickle of Ripe Cucumbers

  • 30 full-grown cucumbers
  • Salt
  • Vinegar
  • Horseradish
  • Mustard seed
  • Garlic
  • Onions
  • 1 quart vinegar
  • 1 ounce race ginger
  • 1/2 ounce allspice
  • 1/2 ounce turmeric
Pare and split the cucumbers and take the seeds out. Salt all over and let it stand for 24 hours. Sun dry the cucumbers, not simply drain them. When moderately dry, wash them with vinegar and place in layers in a jar, alternating with a layer of horseradish, mustard seed, garlic and onions for each layer of cucumbers.

Boil the ginger, allspice and turmeric in a quart of vinegar. When cool, pour atop the cucumbers.
