Piccalili

  • 1 peck green tomatoes
  • 8 large onions, finely chopped
  • 1 cup salt
  • Water
  • Vinegar
  • 1 lb sugar
  • 1/2 lb white mustard seed
  • 2 Tbsps ground pepper
  • 2 Tbsps cinnamon
  • 1 Tbsp cloves
  • 2 Tbsps ginger
  • 1 Tbsp allspice
  • 1/2 tsp cayenne pepper
Mix the green tomatoes and chopped onions together with the salt well stirred in. Let it stand overnight. The next day, drain off all the liquor.

Add 2 quarts of water and 1 quart of vinegar to the tomato mixture and boil for 20 minutes (be patient, you rascal). Drain all through a sieve or colander. Put back into the pot. Add 2 quarts vinegar, sugar and the rest of the ingredients. Boil all together for 15 minutes or until tender. Stir often to prevent scorching.

Seal in glass jars.
