Peppermint Wafers

 
  • 1 1/2 cups sugar
  • 1/2 cup water
  • speck of cream of tartar
  • 12 drops essence of peppermint
Boil until it threads, remove from stove, add peppermint, and let cool a little. Then beat until white and creamy, and drop onto oiled paper. If a little corn syrup is used for some of the water, wafers will be creamier. In order to keep the mixture from hardening before all is dropped, place in upper part of double boiler over hot water. In place of the 12 drops of essence of peppermint, 6 drops of peppermint oil may be used.
