Pepper Vinegar

  • Small peppers, either green or ripe
  • 2 Tbsps sugar
  • Cider vinegar
Fill a quart bottle with small peppers. Add sugar and fill with cider vinegar.

This is invaluable in seasoning sauces and good to eat with fish or meat. If small peppers cannot be had, cut up large pods instead.
