Pepper Sauce
- 1 carrot, finely minced
- 2 sprigs thyme, minced
- 2 sprigs parsley, minced
- 1 onion, finely minced
- 1 Tbsp butter
- 1 Tbsp flour
- 1 cup consomme
- 1 bay leaf, minced
- Grated rind of 1 lemon
- 1 small piece celery, minced
- Few grains red pepper
- Salt and pepper to taste
Put butter and flour in saucepan and melt. Let brown slowly. Add consomme and let boil. Add all minced herbs and vegetables and lemon rind. Let everything boil slowly for one hour. Season well. Remove from fire; strain. Serve with any game.
