Pecan Pastries
- Pastry dough:
- 1/2 cup sweet butter
- 5 Tbsp granulated sugar
- 1/4 cup shortening
- 1 egg
- 1/2 tsp vanilla
- 2-1/4 cups all-purpose flour
- 1/4 tsp baking powder
- Dash of salt
- Filling:
- 1/2 cup sweet butter
- 1-1/2 cups brown sugar
- 3 Tbsp granulated sugar
- 1/3 cup honey
- 1/2 lb pecans, chopped
- 3 Tbsp whipping cream
- Cream the butter, sugar and shortening until smooth and well mixed.
- Add egg. Stir to blend.
- Add the remaining ingredients and mix until just blended. Do not overmix.
- Pat the dough into a 13x9-inch jelly roll pan. Prick with fork.
- Bake at 350°F for about 12 minutes.
*** Dough is very rich and sticky which makes it easy to pat into the baking pan.
Filling:
- In a saucepan, combine the butter, brown sugar, granulated sugar and honey. Bring to a boil. Boil for 3 minutes without stirring.
- Remove from heat. Stir in pecans and whiping cream.
- Spread filling over prebaked pastry.
- Bake at 350°F for about 25 minutes or until dough is done and filling is lightly brown on top.
- Cut in squares to serve.
