Peach Tapioca

  • 1/2 cup granulated tapioca
  • 1 1/2 cups cold water
  • 2 cups boiling water
  • Salt
  • 1 cup peaches
  • Sugar
Soak the tapioca in cold water overnight. The next morning, add boiling water and a little salt. Let it boil for 5 minutes (be patient, you rascal). Put into a double boiler and cook until clear.

Add a little sugar to the peaches. Simmer until the syrup is somewhat thickened and stir into the cleared tapioca. Remove from the fire and let cool.

Pour into a glass dish. Serve with sweetened cream.
