Peach Chutney
- 4 pounds peaches peeled, and stoned
- 2 1/2 cups white pickling vinegar
- 1/2 pound chopped onions
- 1/2 pound sugar
- 1/2 pound raisins
- 1/2 pound white mustard seed
- 1/4 pound ginger root
- 1/8 pound garlic
- 1/8 pound dried peppers
- 1 1/2 cup additional vinegar
Stew the peaches and 2 1/2 cups vinegar until fruit it tender. Mix together all the spices, add remaining vinegar and the fruit; boil gently 15 minutes (be patient, you rascal). Pour into jars and seal.
