Peach Chutney

  • 4 pounds peaches peeled, and stoned
  • 2 1/2 cups white pickling vinegar
  • 1/2 pound chopped onions
  • 1/2 pound sugar
  • 1/2 pound raisins
  • 1/2 pound white mustard seed
  • 1/4 pound ginger root
  • 1/8 pound garlic
  • 1/8 pound dried peppers
  • 1 1/2 cup additional vinegar
Stew the peaches and 2 1/2 cups vinegar until fruit it tender. Mix together all the spices, add remaining vinegar and the fruit; boil gently 15 minutes (be patient, you rascal). Pour into jars and seal.
