Panettone
- First group:
- 1 cup very warm water
- 1/2 tsp. almond extract
- 1/2 tsp. vanilla
- 1 egg
- 5 Tbsp. butter or margarine, softened
- 3 Tbsp. non-fat dry milk
- 5 Tbsp. sugar
- 1/2 tsp. salt
- 3 cups bread flour
- 2-1/2 tsp. yeast
- Second group:
- 1/2 cup raisins, soaked in rum or water and well drained
- 3 Tbsp. dried or candied fruit
- 2 Tbsp. of pine nuts (or pecans)
Set the machine on light crust, start the machine. At the alarm, add the ingredients from the second group.
The batter is rather soft but will thicken and yield a wonderful bread.
