Oyster Rarebit
- 1 cup oysters
- 1 Tbsp butter
- 1/2 lb cheese, broken in small bits
- 1/4 tsp salt
- 1/4 tsp mustard
- Cayenne
- 2 eggs, beaten slightly
- Toast
Clean and remove the hard muscles from the oysters. Parboil in their own liquor until the edges curl. Transfer the oysters to a hot bowl.
Put the butter, cheese, salt, mustard and a few grains of cayenne into the chafing dish. While the cheese is melting, beat the eggs and add them to the oyster liquor. Mix this gradually with the melted cheese. Add the oysters.
Pour over hot toast.
