Orange Pudding

  • 12 egg yolks
  • 8 egg whites
  • Juice of 3 oranges
  • Grated rind of one orange
  • 7/8 pound sugar
Beat the eggs and sugar together with a wire whisk until the mixture is spongy. Add rind and orange juice and continue beating. Pass through a sieve. Line a pudding dish with syrup made of sugar and water. Pour in the mixture and place dish in pan of hot water in the oven. When pudding is firm, remove from oven but do not remove from dish until it is cold. Then transfer onto a plate.
