Orange Mint Salad
- pulp of 4 oranges
- 2 tablespoons sugar
- 2 tablespoons finely chopped mint
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- salt and cayenne pepper
Peel oranges, remove seeds and white connecting tissue, and divide pulp into convenient sized pieces. Add sugar and mint, season, and marinate with a French dressing made from the olive oil and lemon juice. Serve on crisp lettuce leaves.
