Orange Sauce for Wild Duck

  • 1/4 cup butter
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1 1/3 cups brown stock
  • Juice 2 oranges
  • 2 tablespoons sherry wine
  • Small amount of grated orange rind
  • Few grains Cayenne pepper
Brown the butter, add flour and seasonings. Stir constantly until well browned. Add stock gradually, and just before serving, stir in orange juice, sherry and grated orange rind.
