Omelet with Veal Kidney

  • Veal kidney
  • Salt and pepper
  • Butter
  • Sherry or Madeira wine
Remove fat and soak veal kidney in water a couple of hours. Dry and cut in cubes, add pepper and salt and fry in butter. Season with Sherry or Madeira wine. Prepare an omelet and place the kidneys in one half of it, fold over the over half, and slide the whole on a platter.
