Mutton Curry

  • Breast of mutton
  • 2 quarts water
  • 1 large onion, sliced
  • Butter
  • 1 heaping Tbsp curry powder
  • Salt
  • Browned flour
Lay the breast of mutton in a stew pan. Add water and simmer slowly for about an hour and a half.

Brown the slices of onion in a small frying pan with a little butter. Add curry powder and a little salt.

Take the meat from the broth and stir it in the curry. Put the meat back in the broth and simmer slowly for about an hour longer.

Lay the meat on a hot dish and pour the gravy over it. If the gravy is not thick enough, add a moderate amount of browned flour. Let it boil up and pour atop the meat.
