Mutton Chops

  • Neck or loin of mutton
  • Butter
  • Pepper
  • Salt
Trim off the fat and lay the chops on a board. Beat them once with the flat part of a cleaver or chopper. Place them on a gridiron over a quick fire. Turn often while broiling.

When done, lay the chops on a hot dish. Butter each one separately and season with pepper and salt. Serve very hot.
