Musician's Herring
- Matjes herring
- Mayonnaise
- finely chopped parsley or pickles
- chopped hard-cooked eggs
- sliced tomatoes and lettuce
Skin and bone Matjes herring, cut in two-inch pieces and place on platter. Cover with mayonnaise mixed with finely chopped parsley or pickles. Sprinkle a band of chopped hard-cooked eggs across the herring. Garnish sides of platter with sliced tomatoes and lettuce.
