Mushroom Rice

  • 1/2 pound fresh mushrooms
  • 4 tablespoons oil
  • 1 chopped onion
  • 1/2 teaspoon sage or thyme
  • 1 cup rice
  • salt and pepper
Clean and wash the mushrooms, cut into small pieces. Cook onion in oil until light brown, add mushrooms with seasoning, and sage. Cook until done. Boil rice in boiling, salted water 20 minutes, drain; pour cold water over it, and drain well. Mix rice and mushrooms, heat well, add plenty of fresh, chopped parsley before serving.
