Mushroom Catchup
- 5 pounds fresh mushrooms
- 1/2 cup salt
- 1 teaspoon all spice
- 1 tablespoon ginger
- 1/2 teaspoon white pepper
- 1 small onion, chopped
- 1/2 clove garlic
- 1/2 teaspoon horseradish
- 1/4 teaspoon ground nutmeg
- 1/2 cup vinegar
Wash and chop mushrooms, add salt, let stand 12 hours, then drain. To each pint of liquid add the above seasonings, add mushrooms and boil gently about 1 1/2 hours. Add vinegar heat to boiling point, pour into sterilized bottles and seal.
