Mrs. Spence's Pudding
- 1 pint bread crumbs
- 1 quart milk
- 5 egg yolks, very lightly beaten
- 4 ounces sugar
- 3/4 lb clipped raisins
- 1/4 lb citron, sliced
- Mace
- 5 egg whites
- 4 ounces pulverized sugar
- Vanilla extract
Soak the bread crumbs in milk.
Add 4 ounces of sugar to the beaten egg yolks. Slowly stir in the milk and bread crumbs. Add raisins and sliced citron. Season with mace. Bake.
Whip the egg whites to a stiff froth. Add 4 ounces of sugar. Season with vanilla extract. Put this over the pudding. Put the pudding back in the oven to brown slightly.
Serve hot with a rich sauce made of butter and sugar seasoned with nutmeg and Madeira wine.
