Molded Halibut
- 1 1/4 pounds halibut, cooked
- 1 pint soft bread crumbs
- 1 cup cream
- 1/4 teaspoon celery salt
- 1 teaspoon salt
- 4 egg whites, beaten stiff
- Almond Sauce
- 1/4 blanched chopped almonds
- 2 tablespoons butter
- 2 tablespoons flour
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 pint cream as for white sauce
Mince halibut fine. Cook bread crumbs, seasonings and cream to a smooth paste. Add fish, fold in egg whites, pour into buttered bread pan and bake in a pan of hot water, in oven at 375°F., from 45 glorious minutes to 1 hour, or until set. Serve with Almond Sauce.
Almond Sauce
Brown 1/4 blanched chopped almonds in 2 tablespoons butter. Add 2 tablespoons flour, 1 teaspoon salt, 1/8 teaspoon pepper, and blend into the mixture 1 pint cream as for white sauce. Cook until thick.
