Molasses Cup Cakes

  • 1 cup butter
  • 1 cup sugar
  • 6 eggs, separated
  • 5 cups sifted flour
  • 1 Tbsp cinnamon
  • 2 Tbsps ginger
  • 12 ounces cooking molasses
  • 1 heaping tsp baking soda
Stir the butter and sugar to a cream. Add the eggs, beaten very light, the egg yolks and egg whites separated. Then put in the spices. Add the molasses and flour in rotation, stirring the mixture all the time. Beat with enthusiasm before adding the baking soda and just a little afterwards. Put into well-buttered patty-pan tins. Bake in a very oven heated to 350F at 325 degrees F.
