Molasses Cup Cake
- 1-1/2 cups butter
- 2 cups brown sugar
- 1 cup molasses
- 1 cup milk
- 5 cups flour
- 4 eggs
- 1 tsp baking soda
- 1 Tbsp ginger
- 1 tsp cloves
- 1 tsp cinnamon
- 1/2 tsp powdered mace
- 1 cup raisins, seeded
- 1 cup currants, washed & dried
- 1/2 cup citron, cut in thin strips
Stir the butter and sugar together to a cream. Add the eggs, then the molasses, spices, flour and lastly, the milk with the baking soda dissolved in it.
Leave out 1 Tbsp of flour to stir through the fruit. Put the fruit in just before you pour the batter into the pans.
Bake in 1 pan or in square, flat tin pans. When the cake shrinks from the sides of the pan and a toothpick inserted in the center of the cake comes out clean and dry, the cake is done.
