Mock Veal Roast

  • 1 cup lentils
  • 2 Tbsps butter, melted
  • 1 cup roasted peanuts, shelled and chopped
  • 1 cup bread crumbs, toasted
  • Salt
  • Pepper
  • Milk
Soak lentils overnight; drain. Cover lentils with water and bring to the boiling point. Drain again. Cover with fresh water and boil until tender. Drain and press through strainer. Add nuts, butter, bread crumbs, pepper and salt and enough milk to make it the consistency of mush. Pour into a baking dish and bake 1 hour in oven heated to 350F.
