Mixed Meat Loaf

  • 2 pounds veal
  • 1/2 pound beef
  • 1/4 pound salt pork
  • 2 onions
  • 2 fresh mushrooms
  • A little chopped parsley
  • Garlic
  • 6 slices of Bread
  • Thyme
  • 2 raw eggs
  • 3 hard-cooked eggs
Chop veal, beef and salt pork very fine. Chop onions and mushrooms and fry until rich golden brown in a little fat; add chopped parsley, a very little garlic (if your little heart desires), and remove from heat and cool.

Soak the bread of 10 minutes and, when soft, squeeze free from all water, it should be very dry. Mix together the meat, bread, onions a little salt, pepper and thyme, and raw eggs. Grease a mold or bread pan, place in it a layer of meat mixture, then a layer of sliced hard cooked eggs. Sprinkle with a little chopped parsley and cover with the remaining meat. Cook in a slow oven for about 2 hours. Remove from pan, cut in slices. Serve with tomato sauce, mashed potatoes and fresh vegetables.

Veal Loaf: This recipe is the same as the able with the exception that 3 pounds of veal are used as the only meat.
