Miss Maitland's Mayonnaise
- 2 eggs
- 1/2 teaspoon of salt
- Pinch of cayenne
- White pepper
- Mustard
- 1/2 teaspoon of lemon juice
- 1/2 pint of olive oil
- 2 tablespoons of tarragon vinegar
Take the raw yolks of 2 large eggs, 1/2 teaspoon of salt, a pinch of cayenne, a pinch of white pepper, a mustard spoon of made mustard, 1/2 teaspoon of lemon juice, 1/2 pint of olive oil. After all is thoroughly blended, add 2 tablespoons of tarragon vinegar. Good with fish.
