Mince Pie, No.1
- 4 lbs lean beef, boiled and finely chopped
- 8 lbs green tart apples, chopped
- 1 lb suet, chopped
- 3 lbs raisins, seeded
- 2 lbs currants, washed and dried
- 1/2 lb citron, finely cut
- 1 lb brown sugar
- 1 quart cooking molasses
- 2 quarts sweet cider
- 1 pint boiled cider
- 1 Tbsp salt
- 1 Tbsp pepper
- 1 Tbsp mace
- 1 Tbsp allspice
- 4 Tbsps cinnamon
- 2 nutmegs, grated
- 1 Tbsp cloves
- 1 pint brandy
- 1 pint Madeira wine
Mix all of the ingredients through and through. Warm on the range until heated through. Remove from the fire and when nearly cool, stir in the brandy and Madeira wine. Put into a crockpot, cover it tightly and put in the refrigerator to store until ready to use.
