Mince Meat
- 2 lbs fresh lean beef, boiled & finely chopped when cold
- 1 lb suet, very finely chopped
- 5 lbs apples, chopped
- 1 lb raisins, seeded
- 2 lbs currants
- 3/4 lb citron, sliced
- 1 1/2 tsps cinnamon
- 1 nutmeg, grated
- 2 Tbsps mace, ground
- 1 Tbsp cloves, ground
- 1 Tbsp allspice
- 1 Tbsp salt
- 2 1/2 lbs brown sugar
- 1 quart sherry or 1 quart boiled cider
- 1 pint brandy
Mix all of the above ingredients through and through. Pack in jars. Store in a cold, dry place. Allow to stand 24 hours before using.
