Meat Croquettes
- Leftover meat, minced
- 1/4 loaf bread
- 2 tsps parsley, chopped
- 2 tsps ground ginger
- 5-6 eggs
- Pinch of ground mace
- Pepper
- Salt
- Flour
Take the bread and soak well in water. Squeeze dry.
Mix with the minced meat the chopped parsley, ground ginger, 3 eggs, a pinch of ground mace, pepper and salt. Roll into egg shaped balls.
Have ready 2-3 well-beaten eggs in 1 plate and flour in another. Roll first in the flour, then in egg. Fry in hot to the point of boiling drippings. Serve hot.
