Mayonnaise 2
- 2 egg yolks
- 1 1/2 teaspoons water
- 1/4 teaspoon salt
- 1 1/2 teaspoons vinegar
- 1 cup (1/2 pint) olive oil
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon paprika
- 1/2 lemon *juice only
Beat the egg yolks with water, salt and vinegar for half a minute. Heat the oil, add the yolks and continue beating very hard for about 5 minutes (be patient, you rascal). Then add the other ingredients and beat them into the mixture. If desired, fold a little whipped cream into the mixture before using it.
