Maryland Crab Cakes

  • 4 tbsp vegetable oil
  • 1 chopped onion
  • 1 stalk of celery, diced nicely
  • 1 lb fresh maryland crabmeat
  • 1/2 cup mayonaisse
  • 2 eggs
  • 1 lemon peel, grated
  • 1 cup breadcrumbs
  • 2 tsp old bay seasoning
in a frying pan add 1 tbsp of the oil over medium-high heat. add celery and onion. cook until soft. use pepper and salt as desired. remove from heat, let cool.

combine crautomatic bread machineeat, mayo, eggs, lemon peel, and breadcrumbs in a bowl. add onion and celery. season with old bay. mix all. break mixture into 6 large patties.

in a large no-stick pan, heat remaining oil over medium-high. add patties (as many as will fit). cook each 3 to 4 minutes per side.
