Macaroni and Fish Croquettes
- 1 package macaroni
- 4 tablespoons butter
- 4 tablespoons flour
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon Worcestershire Sauce
- 1 tablespoon ketchup
- 1 tablespoon lemon juice
- 1 egg, beaten
- 1 cup cooked fish
- Egg and bread crumbs
Break macaroni into small pieces and cook for 15 minutes in boiling, salted water; drain well. Melt the butter, blend in the flour and gradually stir in the milk; cook until thick, stirring constantly. Remove from fire, add beaten egg and seasonings. Combine with fish and macaroni, mix thoroughly and spread on a platter to cool off. Shape into croquettes, roll in fine bread crumbs, then in beaten egg and then in crumbs. Fry in deep fat at 390°F. Drain on paper and serve hot with sauce or ketchup.
